Basic Information of East Hokkaido
On the eastern side of Hokkaido lies East Hokkaido, also known as
Doto, an area where untouched natural beauty abounds. While it may
not have a strong image as a region for alcohol, East Hokkaido
actually boasts a variety of delicious beverages that take
advantage of its cool climate. In recent years, the area has
gained popularity, not only among locals but also with tourists
who return time and again. A distinguishing feature is that many
of the region’s drinks are made from high-quality rice and wheat
nurtured by the vast land, as well as pristine groundwater that
has formed over many years in the great outdoors. The types of
sake, whiskey, shochu, and beer available vary by location, making
it an excellent addition to your travel plans. This time, we
introduce some recommended alcoholic beverages meticulously
crafted in East Hokkaido!

Local Sake

1.Fukutsukasa (Fukutsukasa Brewery Co., Ltd./Kushiro City)
Located in Kushiro City, the gateway to East Hokkaido
overlooking the Pacific Ocean, is Fukutsukasa Brewery, a
venerable establishment with over 100 years of history. This
brewery is one of the few in Japan that continued production
throughout World War II without interruption. The Japanese sake
"Fukutsukasa," cultivated in the cool climate of
Kushiro—famously described as "a town that is amusingly cool,"
with average temperatures from July to September hovering around
20 degrees Celsius—is a well-kept secret among sake enthusiasts.
Made with rice from Hokkaido and groundwater filtered through
the great nature of East Hokkaido, it is characterized by a
refreshing smoothness and a taste that pairs well with any dish.
Locally cherished as an everyday sake for its drinkability, it's
said to be "the sake that you drink every day." During the
annual brewery open day, locals form long queues to enjoy
"Tarekuchi Sake," a special brew available only at this time.
Other popular products include the challenging brand "Goshiki no
Kumo," crafted by young brewers, and "Pon Epere," adorable
bear-designed ceramics. When enjoying Fukutsukasa in its
hometown of Kushiro, "Darakan" is recommended—a delightfully
leisurely experience where Fukutsukasa is warmed to body
temperature in a barrel placed beside the hearth at robatayaki
restaurants, allowing you to sip "gently" for hours. Fukutsukasa
can mainly be enjoyed at dining establishments in the Kushiro
area.

Recommended Varieties
Fukutsukasa Junmai Sake
This is the regular sake from Fukutsukasa. Made with rice from
Hokkaido, it is characterized by its rich flavor. Among junmai
types, it has a refreshing smoothness that pairs well with
Hokkaido ingredients. It's a staple product that accompanies
the daily life of Kushiro's locals, perfect for casual
enjoyment during your everyday evening drink.
Umi Giri
An alcohol inspired by the foggy town of Kushiro. Initially
sold exclusively in Hokkaido, its growing popularity has led
to availability through online shops. It offers a light and
crisp taste, making it a sake you won't tire of drinking.
Enjoy it at your preferred temperature, from chilled to warm.
Mina Nikori
A yogurt-based alcoholic drink made with 100% Hokkaido milk.
It has a thick and creamy texture with a refreshing tartness,
resembling the taste of drinkable yogurt. Recommended even for
those who are not fond of alcohol, it is truly a masterpiece
that brings a smile to anyone's face, as its name suggests.

2.Kitano Katsu (Usui Katsusaburo Shoten/Nemuro City)
Nemuro City, located at the easternmost point of Japan, is well
known for witnessing the earliest sunrise. In this region, with
its clear air and distinct seasons, Usui Katsusaburo Shoten was
established in 1887 as a traditional sake brewery. In the past,
sake brought all the way to Nemuro was very expensive. The
renowned sake "Kitano Katsu" was created with the aim of
producing sake locally so more people could enjoy it. Their
commitment to being a brewery rooted in the community remains
unchanged, providing employment to local kombu fishermen during
the off-season in winter. The meticulously crafted sake is
produced in limited quantities, making some varieties
challenging to obtain outside the region. Known for its
excellent pairing with seafood, a hallmark of this fishing town,
Kitano Katsu is a popular choice among sake enthusiasts
nationwide. The premium sake "Daiginjo" has notably won the gold
prize three times at the Japan-exclusive Annual Japan Sake
Awards. To strengthen the business, they transitioned from a
sole proprietorship to a corporation in October 2024. Kitano
Katsu is scarcely distributed outside the Kushiro and Nemuro
areas. Since Usui Katsusaburo Shoten does not sell sake
directly, it can be purchased at liquor stores within Kushiro
and Nemuro. Enjoy pairing Kitano Katsu with delicious gourmet
cuisine featuring seasonal ingredients at local dining
establishments, which is highly recommended.
Recommended Varieties
Kitano Katsu Taikai
A staple sake under the "Kitano Katsu" brand, its combination
with seafood such as Nemuro's representative "Hanasaki Crab"
is exceptional. It is characterized by a refreshing smoothness
and a flavor that evokes the essence of the sea with every
sip. While not overpowering, its traditional deep richness
makes it a sake that you might find yourself drinking
continuously.
Kitano Katsu Houou
This sake belongs to the upper selection class, formerly known
as Grade 1 sake. It has a more robust flavor than "Taikai" and
is known for its calm and pleasant taste. Though it lacks
harshness, it offers a crisp aftertaste that is top-notch. It
can be enjoyed either chilled or warmed, making it versatile
for various occasions.
Shiboritate
This is a limited-edition sake sold only in the Nemuro area
every January. Known for its aromatic and fruity taste, it is
best enjoyed as a chilled sake since it is bottled without
pasteurization. Due to its scarcity, earning the nickname
"phantom sake," you might consider yourself lucky if you
happen to taste it.

Whiskey

1.Akkeshi Whisky (Kenteng Industrial Co., Ltd., Akkeshi
Distillery/Akkeshi Town)
Akkeshi Town, an hour's drive east from Kushiro City, is known
for its oysters and is home to "Akkeshi Whisky," a product
gaining attention both domestically and internationally. With a
climate and natural environment similar to Scotland's Isle of
Islay, Akkeshi is ideally suited for whisky distilling. Driven
by the desire to "create whisky like Islay malt using
traditional Scottish methods," Akkeshi Distillery uses
Scottish-made stills, reflecting their dedication to quality.
The distillery, established in 2016, won the title of world's
best in the Blended Whisky category at an international contest
in 2022. Akkeshi Whisky is crafted using barley and mizunara oak
from the vast lands of Hokkaido, along with the pristine waters
of Akkeshi, under the motto "crafted from the nature of
Hokkaido." In addition to the taste of the whisky itself, it
boasts a wide variety of bottles, most of which are rare, making
them highly sought after, with many already difficult to obtain.
You can savor Akkeshi Whisky at local dining establishments or
the oyster bar inside the roadside station "Akkeshi Gourmet
Terminal Conchiglie." Occasionally, Conchiglie hosts a lottery
event for Akkeshi Whisky, with applications accepted only
on-site, offering a chance to obtain these rare whiskies.

Twenty-Four Solar Terms Series
A blended whisky series released every three months. Each
bottle offers a unique production method, ingredients, and
theme, providing diverse flavors. Since there are currently no
plans for re-releases, these are exceptionally rare whiskies.
They are available at some restaurants within Akkeshi Town and
Kushiro City, allowing you to enjoy their distinct flavors.
Newborn Series
These are whiskies still in the early stages of aging after
being cask-filled. Matured in rare mizunara oak or sherry and
bourbon barrels, even a single drop on Akkeshi's famous
oysters delivers a rich aroma. Due to limited quantities,
these products are now hard to come by.

Beer

1.Brasserie Knot (Knot Co., Ltd./Tsurui Village)
Adjacent to the Kushiro Wetlands, Tsurui Village is a beautiful
place home to the red-crowned crane, a living national treasure.
Here, the closed-down local elementary school was transformed
into "Brasserie Knot." It is the only brewery in the Kushiro and
Nemuro area specializing in craft beer, using custom-designed
brewing equipment instead of off-the-shelf products. The brewery
offers free tours, and at its onsite shop, visitors can sample
beers and fill growlers with draft beer to take home. These
craft beers, crafted by stripping away impurities and
unnecessary elements, feature a pure taste that naturally blends
with the nature of East Hokkaido. The wide variety of seasonal
beers come in stylish packaging, making them perfect gifts.
Their craft beers pair well with any dish and fit any occasion.
Brewer Hiromi Uetake, who started his career at "COEDO BREWERY"
in Saitama Prefecture and served as head brewer at "Hobbitkotan
Brewing," also brewed beer in Canada at "Godspeed Brewery."

Recommended Varieties
FLOWER
A fruity beer characterized by its floral-like aroma and clear
taste. Made with barley malt as a base, along with wheat and
oat malts. With a soft mouthfeel and mild bitterness, it's an
excellent option for those who are not typically fond of beer.
BIRD
A craft beer that offers a unique interpretation of the
American-style pale ale. Compared to typical pale ales, it has
minimal caramel flavor and features a light, easy-drinking
body. The hops give it a subtly fruity aroma, creating a
refreshing taste that doesn't get old.
DOTO
An exclusive brew available only in the East Hokkaido area.
It's known for its strong citrus flavor from American hops and
a fruity taste. This beer embodies the expansive nature of
East Hokkaido, with a deep and robust body that enhances its
crisp finish. Because it's limited to the East Hokkaido area,
it makes a delightful souvenir.
2.Abashiri Beer (Abashiri Beer Co., Ltd./Abashiri City)
Facing the Sea of Okhotsk, Abashiri City is famous for the
"drift ice" that covers the sea surface in winter. In
collaboration with the School of Bioindustry at Tokyo University
of Agriculture located in Abashiri and with a joint effort
between the university and local community, "Abashiri Beer" was
developed. These beers, crafted using Germany's traditional
brewing method through the rare three-kettle process used in
Japanese local beer, are known for their deeply flavorful
richness. They are brewed with a variety of unique adjunct
ingredients such as the local specialties like scallops and
milk. Among the favorites is the "Drift Ice DRAFT," which uses
the drift ice from the Okhotsk Sea as its brewing water. There
are also many other unique and diverse beers available
exclusively in Abashiri. The beer factory has an adjoining
restaurant, "YAKINIKU Abashiri Beer Hall," where you can enjoy
fresh, locally brewed beer alongside premium Okhotsk Abashiri
Wagyu beef.
Recommended Varieties
Drift Ice DRAFT
A local beer characterized by its richness and refreshing
qualities, made using drift ice as its brewing water. Enhanced
with the natural pigment of gardenia, this beer has a vibrant
blue color reminiscent of the drift ice floating in the
Okhotsk Sea during winter. It has a clean taste with subdued
bitterness.
Cherry Drops
Abashiri is the northernmost cherry-producing region in Japan.
This fruity beer is infused with the strong aroma of cherries
grown under the influence of winds from the Sea of Okhotsk.
Known for its distinct fruit sweetness and refreshing
smoothness, it's an excellent choice for those who aren't
typically fond of beer.
ABASHIRI Premium Beer
Made with malted barley from Abashiri, this beer offers a deep
and complex flavor profile. It features the aromatic scent of
American hops with a perfect balance of bitterness, aroma, and
sweetness, truly making it a "premium" beer as its name
suggests.
3.Okhotsk Beer (Okhotsk Beer Co., Ltd./Kitami City)
Located about an hour's drive inland from Abashiri City is
Kitami City, a central hub of the Okhotsk region. After the
revision of the Liquor Tax Act, "Okhotsk Beer" became a pioneer
of modern craft beer in Japan as one of the first to develop
local beer. With a focus on 100% malt and crafted meticulously
using traditional German methods, this beer is a unique delicacy
that can only be savored here. Each beer is handcrafted with
great care and effort. With the philosophy that "beer is a
living thing," Okhotsk Beer is made with the intent of offering
fresh beer, hence its short shelf life of 30 to 60 days. The
adjoining beer hall, "Okhotsk Beer Factory," offers fresh beer
paired with dishes like "Okhotsk Kitami Salt Yakisoba" and local
Hokkaido beef or Ezo deer cooked in beer.
Recommended Varieties
Okhotsk Pilsner
An original take on the world-famous Czech Pilsner. This beer
features a subtle hop bitterness with a slightly sweet
aftertaste. Its smooth mouthfeel and strong aroma make it a
perfect match for Japanese cuisine and similar dishes.
Okhotsk Ale
Styled after the traditional British ale, this beer has a rich
color with a crisp and bitter mature taste. It pairs well with
rich dishes such as beef, sausages, and Western-style flavors.
At the Okhotsk Beer venue, you can also enjoy the unfiltered
version of this brew.
Okhotsk Weizen
A wheat malt beer famous in the Bavarian region, also known as
white beer. It has a weaker bitterness and is high in

Shochu
1.Kiyosato Potato Shochu (Kiyosato Shochu Distillery/Kiyosato
Town)
Located a 50-minute drive east from Abashiri City, the gateway
to Okhotsk, is Kiyosato Town. Known as "the birthplace of
water," Kiyosato is famous for its "Kaminoko Pond," which is
said to be fed by the underground water of Lake Mashu. Developed
using this pure water and the town's renowned potatoes is
"Potato Shochu Hokkaido Kiyosato." As the first potato shochu
made in Japan, it is characterized by its unique refreshing and
gentle taste. The stylish bottle design makes it a perfect gift.
At the Kiyosato Shochu Distillery, visitors can tour the
distillery and learn about the history and production process of
Kiyosato shochu, offering an unmissable experience for shochu
enthusiasts. Guided tours with staff are available with prior
reservation.
Recommended Varieties
Hokkaido Kiyosato
The first product in the line of potato shochu. Made using
Kiyosato's specialty potatoes and pure underground water.
Distilled with white koji, it features a subtle sweetness and
gentle flavor.
Hokkaido Kiyosato [Cask]
An amber-colored potato shochu aged for about a year in white
oak barrels that are also used for aging whiskey. It offers a
rich taste with a faint sweetness blended with the aroma of
white oak.
Hokkaido Kiyosato [Genshu]
A premium product featuring an alcohol content of 44%, which
is the limit for shochu. Distillation is halted at the point
where the richest and most flavorful portion is extracted,
enhancing the robust body and sweetness. Enjoy the rich aroma
that only a genshu can provide.
2.Tantakatan (Oenon Holdings Co., Ltd./Tokyo)
A 40-minute drive west along the coastline from Kushiro City
takes you to Shiranuka Town. It was here in 1992 that the shiso
shochu "Tantakatan" was developed, using an abundance of red
shiso grown in the area. Originally created as a product for
Shiranuka's "One Village, One Product" movement, it was
initially sold only within Hokkaido. However, word of mouth
increased its popularity, and now it is a shiso shochu enjoyed
throughout Japan. The red shiso used in Tantakatan is specially
grown by contracted farmers exclusively for this product. In
Shiranuka, where the town enjoys long daylight hours and
significant temperature differences between day and night, the
red shiso harvested is known for its vivid purple color and
strong fragrance. At the roadside station "Shiranuka Koi-toi,"
you can purchase Tantakatan and try the fragrant "Tantaka
Ramune" made with plenty of the locally grown shiso!
Recommended Varieties
Shiso Shochu Tantakatan
Made using red shiso painstakingly cultivated by contracted
farmers who handle every step by hand. It is characterized by
a fresh aroma and the unique flavor of shiso. With a crisp
taste, it pairs excellently with food and can be enjoyed in
various original ways by changing the mixers.
Aka Tantakatan
A premium product using more than five times the amount of red
shiso compared to the original Tantakatan. It is distinguished
by its floral aroma and dry taste. The natural ruby color is
visually stunning and is recommended for a wide range of
occasions, such as parties.
TAN TAKA TAN SHISO Umeshu
A liqueur combining the red shiso used in Tantakatan with
plums. Made without the addition of artificial flavors or
colorings, it offers the sweet and sour taste of plums. It's
popular when mixed with juice or yogurt and is recommended
even for those who typically avoid alcohol.
